About Biànca

Biànca was born out of a desire to bring the spirit of Italian dining to Brisbane’s Fortitude Valley, capturing the effervescence of a classic trattoria within a sleek, warm, and colourful setting. The food focuses on perfecting classic Italian dishes, made in-house with fresh, seasonal produce. The beverage program is thoughtful and balanced, featuring Italian-leaning wines and seasonal cocktails that complement the food and the vibrant atmosphere.

The Role

Biànca is looking for a professional and focused Commis Chef to join the team. Your creativity and technical skill will contribute to our diverse menu, ensuring every dish meets our high standards for taste, consistency, and presentation. This role requires attention to detail, the ability to work efficiently under pressure and a passion for delivering food that exceed our guests' expectations. We are looking for individuals who are committed to the hospitality industry, delivering a high level of service while thriving in a team-oriented environment.

• Experience working in a quality-driven kitchen environment
• Confidence in preparing and plating dishes to a consistent high standard
• Strong understanding of mise en place, cleanliness and section organisation
• Ability to follow recipes, plating guides and kitchen systems
• Comfortable working under pressure in a fast-paced setting
• Thrives in a fast-paced, team-oriented environment and communicates clearly under pressure
• Sound knowledge of food safety and hygiene standards
• Commercial cookery qualification or apprenticeship is highly regarded
• A genuine passion for Italian cuisine, exceptional produce and continuous learning
• Experience in Fryer Section is highly regarded
