About Biànca

Biànca was born out of a desire to bring the spirit of Italian dining to Brisbane's Fortitude Valley, capturing the effervescence of a classic trattoria within a sleek, warm and colourful setting. The food focuses on perfecting classic Italian dishes, made in-house with fresh, seasonal produce.

The beverage program is thoughtful and balanced, featuring Italian-leaning wines and seasonal cocktails that complement the food and the vibrant atmosphere.

The Role

We're looking for an experienced and self-sufficient Prep Chef or Cook to join the team at Biànca, specialising in fresh pasta production and bulk kitchen preparation.

This is a rare opportunity for a chef seeking a better work-life balance, with predominantly daytime hours, early starts and no service responsibilities once training is complete. You'll play a vital role in preparing the foundations for one of Brisbane's busiest Italian kitchens, ensuring every service begins with exceptional quality and consistency.

This role will be best suited to someone who:

• Has strong experience in bulk food preparation within a quality-driven kitchen
• Has experience preparing fresh pasta and dough, or demonstrates strong technical pastry or dough skills
• Is confident working independently and managing prep lists with minimal supervision
• Takes pride in organisation, cleanliness and maintaining an exceptional mise en place
• Can consistently follow recipes, production schedules and kitchen systems
• Enjoys working efficiently in a structured, fast-paced environment
• Has excellent time management skills and takes ownership of their section
• Is seeking a role focused on daytime hours and a healthier work-life balance
• Has a genuine passion for quality produce, Italian cuisine and continuous improvement
