About hôntô

hôntô is inspired by contemporary Japanese cuisine, where classic dishes are reinterpreted with seasonal ingredients and a focus on local produce. The menu invites guests to share and experience the full range of delicate, thoughtful flavours, with highlights like the Raw Bar, where you can watch the team showcase their knife work. The beverage program is equally refined, centred on premium sake, Japanese whiskey (including one of the largest collections in the Southern Hemisphere), and a curated selection of beers and wines. For a more intimate experience, the ôô room offers a hidden nook where you can enjoy the full drinks list and food offerings, all paired perfectly to enhance the umami, texture, and acidity of each dish. 

The Role

Hôntô is looking for a skilled Sushi Chef who will be responsible for preparing high-quality nigiri, sashimi and sushi dishes to join our team on a full-time basis. Your creativity and skill will contribute to our diverse menu offerings, ensuring each dish meets our standards of excellence in taste and presentation. This role requires attention to detail, the ability to work efficiently under pressure, and a passion for delivering dishes that exceed our guests' expectations. We are looking for someone who has a passion for Japanese cuisine, the hospitality industry and delivering a high-level of service whilst working in a team environment.

  • Proven experience as a Sushi Chef or Chef de Partie in a high-quality, fast-paced kitchen
  • Experience preparing a variety of sushi including maki, nigiri, sashimi, and specialty rolls
  • Strong skills in food preparation, presentation and consistency under pressure
  • Confidence in running a section independently during busy service periods
  • Experience with mise en place, recipe execution and efficient station setup
  • A strong understanding of kitchen systems, cleanliness, and food safety standards
  • Ability to mentor and support junior chefs and kitchen hands
  • A calm, professional and collaborative approach to kitchen teamwork
  • Commercial cookery qualification or apprenticeship is highly regarded
